In the past, I’ve turned this mac and cheese into a casserole, and it’s been great. Prepared the mac and cheese per the recipe. Then, I’ve mixed in a thawed package of peas and carrots and a package of diced ham, poured everything into a casserole dish, and topped with extra grated cheese and some crushed Ritz crackers mixed with melted butter. Stored in the fridge overnight, and then baked long enough to heat through the next day. A salad and some Texas toast rounded out the meal.
