Today is all about healthy pork chop recipes, y’all! Ok, let’s address the elephant in the room—we know what you’re thinking. “Pork chops are tough!” “Pork chops are dry!” Well, not anymore, folks! These healthy pork chop recipes are not your grandmama’s pork chops. Years ago, the direction on this classic weeknight dinner was to cook pork all the way through to avoid getting trichinosis. But that “wisdom” has been debunked! Now you should just aim for an internal temperature of 145˚F. We highly recommend using a meat thermometer because pork chops can be very easy to overcook, which is what can cause them to be dry and tough. Once you cook these healthy pork chop recipes to the correct temperature, you may be surprised at just how succulent a pork chop can be!

While we love a good down-home Southern recipe, we also try to keep an eye on what we’re eating to ensure our diets are balanced and overall healthy. When it comes to eating lighter, we love healthy chicken recipes because they go over well with everyone in the family and are generally pretty easy to prepare.

Chicken is, naturally, a healthy option in the kitchen as it is a lean protein source, meaning it’s not an overly fatty protein option. The beginning of a new year is the perfect time for a fresh start. Whether your goal is to learn a foreign language, exercise more, or quit biting your nails, January 1st is a great day to begin your journey.

Dads are real-life superheroes. When we’re kids, they seem impossibly big and strong and are a safe-haven from the evils of the world. Of course, now that we’re older, we want to do everything in our own power to keep our super dads healthy. So while we’re planning our Father’s Day menus, we’re planning on incorporating superfoods in our recipes that can have incredible health impacts!

Keep reading for some of the health benefits of some of the superfoods included in the recipes below. You’ll be happy to know that you’re packing a nutrient-rich punch when you’re cooking for dad, and it’s good information to keep in mind for your own diet, too.

Blueberries: These little berries are packed full of antioxidants, which means they can help reduce the risk of cancer, heart disease, and a multitude of other inflammatory conditions. Another bonus? They can improve digestion!

Salmon: Everyone knows that salmon is full of healthy fats, especially omega-3 fatty acids, which can help to reduce inflammation. Though, while salmon can help to maintain a healthy weight and lower the risk of heart disease and diabetes, only two to three servings of salmon or other fish should be eaten per week.

Dark Leafy Green Veggies: Dark leafy green vegetables, including kale and collards, are rich in folate, iron, fiber, and more important nutrients, and have the power to reduce your risk of a plethora of chronic illnesses, like heart disease and type 2 diabetes, and can even protect against certain cancers.

Nuts: Want to reduce your risk of heart disease and support your weight loss goals? Then consider using more nuts, including almonds and pecans, in your dishes! They’re fiber-rich, high in protein, and have plenty of heart-healthy fats.

Ginger: Wow! What can’t ginger do? High in antioxidants, it can help reduce pain, manage nausea, and even lower one’s risk of dementia, heart disease, and some forms of cancer.

Avocado: This fruit—that’s right, avocado is a fruit!—are high in fiber, which helps keep us full longer, and monounsaturated fats, including oleic acid, which helps reduce inflammation. And like many other superfoods, eating avocados could help reduce a risk of diabetes, certain cancers, heart disease, and other chronic diseases.

Sweet Potatoes: Everyone knows that sweet potatoes are a healthy alternative to white and red potatoes, but not everyone knows why! They’re full of potassium, fiber, vitamins A and C, and carotenoids—the latter of which can help reduce the risk of certain types of cancers. PLUS, they can help improve the blood sugar control in individuals with type 2 diabetes.

Air frying has taken the world by storm and for good reason! It’s a great way to enjoy our favorite southern fried foods without all the guilt, oil, and added calories.

Holy guacamole! Guacamole is such a fresh-tasting snack—we just can’t get enough of it! Of course, for as many people, there are an equal number of ways to prepare it. Everyone’s taste is different, and this is such an easily customizable dish. Of course the foundation of any guacamole is avocado, fresh cilantro, fresh lime juice, and salt, but it’s ok to let your imagination run wild! Try adding fresh tomatoes, corn, jalapeños, pistachios, radishes, cayenne pepper, or any number of ingredients that will help you to make a guacamole that you won’t be able to get enough of!

When it comes to eating guacamole, we’ll eat it plain with tortilla chips, but we also enjoy it atop our tacos or spread on toast and topped with an egg for a flavorful take on avocado toast. Paula even has recipes for a guacamole and spinach dip and guacamole deviled eggs! Who knew guacamole could be so versatile? Paula has some great guacamole recipes, and we’ve shared them below.
